Stave 28 exists to explore the potential of the harvest; to produce unique wines with character. Stave 28 moves against the grain and celebrates the diversity of each wine within a given year. This view is somewhat radical in an industry where homogenization is often rewarded. Standardized wine making practices "push and pull" wines towards consistent, repeatable profiles. By producing only small lots, Stave 28 assures that distinct characteristics are present. At harvest time the grapes are hand sorted and fermented in small batches. A "shepherding" approach is utilized to guide the wine toward completion. The wine is then aged in a collection of the world’s finest barrels for up to 18 months and bottled unfined and unfiltered. The result is a handcrafted wine with the personality and definition that only an artisanal wine can deliver. Stave 28 views the wine making process as any other formal art form. The beauty lies in the fact that it may not be perfect and is open to interpretation. A collection of diverse cellar techniques and a close working relationship with the growers allows us to craft truly personal wines. This collaboration creates “agricultural art” and harbors the most fundamental traditions of wine making.
